Congratulations to Britney Stephens, whose recipe for Bacon Crackers is this week’s winner in Codi and Nida’s Recipe Contest. The crackers are perfect for potlucks and office Christmas gatherings. After all, who doesn’t like bacon? Britney has won $100 gift certificates to The Unrefined Olive and Ferme Reveuse. She’s also in the grand prize draw for a dining room set from La-Z-Boy! It’s not too late to enter your recipe – just go to www.jewelradio.com.
1)Bacon, cut in half (at least two packages)
2)1 1/2 cups of freshly grated Parmesan (or that cheap stuff, 1 1/2 cups per 2 packs of bacon)
3)Box of Toppables crackers
Set oven at 250°. Line baking sheets with wired racks (important; do not try without wire racks)
Cover a cracker with cheese then wrap it with bacon. Takes a few tries to get used to it, but you’ll have plenty of crackers to practice with.
Bake for 2 hours.
You can freeze these. To reheat you set your oven to 350° and warm through.
Also, you can try brown sugar instead of parmesan. You can never make enough for a potluck.
“I got this recipe from the pioneer woman. She uses the cheap parmesan stuff. I haven’t tried that before. When I was young we called it stinky feet. So Everytime my mom made pasta for dinner we would ask for stinky feet on it. Haha.” – Britney Stephens
