This week’s winner is Doug Cully with his yummy recipe for Crustless Zucchini Pie.
-1 cup shredded zucchini (liquid squeezed out is a must)
-1/2 cup chopped onion
-1/4 cup diced celery
-1/4 cup chopped chives
-1/2 cup part skim mozzarella
-1/2 cup whole wheat flour
-1 tsp baking powder
-2/3 cup milk (I often use plain yogurt as a substitute for the milk as it gives a richer taste)
-1 tsp olive oil
-2 large eggs, beaten
-salt and pepper to taste (I still have basil growing in a pot so I added some fresh basil leaves too)
Preheat oven to 375 degrees. Grease pan with olive oil.
Combine zucchini, shallots, chives, celery and mozzarella cheese in a bowl.
Sift flour and baking powder in a medium bowl.
Add remaining ingredients to the bowl and blend well.
Combine with zucchini mixture and pour into the pie dish.
Top with Parmesan cheese and bake 30-35 minutes.
Let stand 5 minutes before serving then enjoy.
