I am totally loving this contest, Codi and Nida’s Recipes…..so many great recipes out there to share and this one is no exception.
Sandra Fraser’s Golden Chicken Soup For One!!
-1 teaspoon olive oil, butter or ghee
-1 tablespoon finely chopped onion
-2.5-3 0z cooked chicken (leftovers or rotisserie)
-1 cup chicken broth
-1/4 teaspoon each of salt and pepper (to taste)
-1/4 tsp ground turmeric
-1/2 cup fresh spinach, chopped
2 tablespoons half and half, cream or coconut milk
Heat the oil/butter in a small pot over medium heat. Add the onion and saute 2 minutes to soften. Add the cooked chicken, broth, salt, pepper and turmeric. Increase to a low boil and cook 5 minutes to let flavors come together.
Add spinach and reduce to a simmer for 2-3 minutes. Stir in cream for one minute just to heat.
