-6 slices of bacon, cooked and chopped
-1/2 onion, diced
-1 package of mushrooms, chopped
-2 tsp olive oil
-1 cup chopped baby spinach
-6 oz shredded cheddar cheese
-1/2 cup heavy cream
-salt, to taste
-pepper, to taste
Heat olive oil in skillet over medium heat. Add onion and mushrooms and cook for 5 minutes, stirring occasionally.
In a medium sized bowl, beat eggs, cream, salt and pepper together. Stir in the onions and mushroom mixture, spinach, bacon and cheese.
Grease a glass pie plate or quiche dish and pour the egg mixture in, evenly dispersing the mixture. Bake at 350 degrees for 25-30 minutes, or until a knife inserted in the center comes out clean. Let rest 5 minutes before serving.
