4 large, ripe tomatoes, chopped (or a small container of grape tomatoes cut in half)
1/2 pound brie, rind removed and torn into medium-sized pieces
1/2 cup roughly cut basil leaves
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup extra virgin olive oil
Spaghetti (enough for 4-6 people)
Freshly grated Parmesan cheese
1. Combine tomatoes, brie,basil, garlic, salt, pepper, and olive oil in a resealable bag or bowl and leave out at room temperature for two to three hours.
2. Bring a large pot of salted water to a boil. Cook spaghetti according to package directions or until al dente.
3. Drain pasta and immediately add tomato mixture to it. Mix well until brie is melted and serve immediately. Garnish with grated Parmesan cheese.
